Pinakbet Dish
Pinakbet is made from mixed vegetables sautéed in fish or shrimp sauce. The word is the contracted from the Ilokano word pinakebbet, meaning "shrunk" or "shriveled." The original Ilocano pinakbet uses bagoong of fermented monamon or other fish, for seasoning sauce, while further south, bagoong alamang is used. Pinakbet is a Filipino vegetable dish. It is composed of a variety of vegetables and it also has a protein component. I made use of lechon kawali or crispy deep-fried pork belly for this recipe. This recipe is a variation of the popular Pinakbet Ilocano.
Pinakbet (also called pakbet or pinak bet) is an indigenous Filipino dish from the northern regions of the Philippines. Pinakbet is made from mixed vegetables sautéed in fish or shrimp sauce.[1] The word is the contracted from the Ilokano word pinakebbet, meaning "shrunk" or "shriveled."[2] The original Ilocano pinakbet uses bagoong of fermented monamon or other fish, for seasoning sauce, while further south, bagoong alamang is used. The dish usually includes bitter melon (ampalaya).[3] Other vegetables used include eggplant, tomato, okra, string beans, chili peppers, parda, winged beans, and others. Root crops and some beans like camote, patani, kadios are optionally added. The young pod of marunggay is added. It is usually spiced with ginger, onions, or garlic. A Tagalog version typically includes calabaza (kalabasa).

What’s your favorite food
Ah thanks for the ask!! I'm not a picky eater and I also tend to have a lot of favorite things, especially when it comes to food. But my favorites are definitely filipino dishes!! Specifically, how my parents make them.
My father is an expert in all things adobo (see picture) and my favorite one is adobong pusit (english: squid adobo; not pictured).
My other favorites are my mother's Ginisang Repolyo (Stir-fried Cabbage), Nilagang Baboy (Pork Nilaga Soup), and Sinigang na Salmon Belly (Salmon Belly Filipino Broth; see picture below)
I also mostly like sweets and confectioneries outside of dishes but if I'm asked to choose between candy, cookies, cake, kakanin, or dishes i can eat with rice, I'll always choose the dish and I've never really known why.

Epilogues Meat also mentions that Karkat ate CHOCOLATE COVERED BEETLES, confirming that yes, trollkind eats bugs and insects. They would find shit like casu marzu (cheese with maggots), kamaro (mole crickets), mezcal worm, abuos (ant egg caviar), adobong salagubang (seasoned may beetle), uok (coconut worms), and other insect dishes across the world as actual meals for them. I mean, this is the same Alternia alien trollkind that has their Christmas decorate LITERAL MONSTER SHIT instead of a pine tree. And it really is shit, even Karkat says BEHEMOTH LEAVINGS towards his Future self, confirming that the trolls celebrate the holidays with POOP. Makes me wonder when people ship troll x human, would the fans want the humans engage in troll culture? I can't find an HD pic for this but here's puto bumbong on banana leaf for you!
This is something special because it is sold only during Christmas season.
For me, puto bumbong is synonymous to Misa de Gallo or the dawn masses before Christmas. Upon exiting the Cathedral after the mass, you can already smell puto bumbong as they are being cooked in the stalls that line the Cathedral's perimeter. It is best eaten right off the stove.
They now have different variations of puto bumbong, from having leche flan (similar to creme bulee) on top of it, to having yema (like caramel) on it. But nothing can beat newly cooked puto bumbong wrapped in banana leaf at dawn after the mass.
